Hundred Hills produce low yielding, high quality grapes to slowly grow and ripen on the vine more than the magical hundred days. Every year the wines vary but what you get is a true representation of what’s happening in the vineyard in that year!
“Growers and winemakers may choose to harvest in one pass if vines of a particular variety show uniform ripening between plots, or if the volume of wine being made is so high that somewhat uneven ripening will add complexity. The decision to multiple passes for best possible ripeness is also determined by practical issues, such as availability of labour and harvest equipment; labour costs; wine selling price and margins; number, size, and availability of fermentation vessels; and anticipated weather.
Harvesting over multiple passes is a common technique used by wineries making small lots of wine. The goal is to ensure consistent ripeness, or to create complexity with a gradient of maturities. There may also be practical matters that dictate whether multiple passes are crucial or impossible.”
A very late harvested ‘third pass’ selection of Pinot Noirs and Chardonnays from right across the south-facing vineyard parcels was made in 2019.
Appearance:
The Hundred Hills Hillside No. 3 wine presents a deep garnet colour with purple undertones, indicating richness and concentration. It is opaque and velvety in appearance, suggesting a wine with depth and complexity.
Aromas:
Biscuity shortbread aromas lead into layers of yellow fruit on the nose, from ripe citrus to yellow apple, Mirabelle plum and roasted pineapple.
Palate:
Soft, creamy texture with lemon curd, mandarin, cherry and delicate pineapple notes on the palate. Taste the wine in your mouth and your transported back to your favourite experience of a lemon tart! 5*
